Quotes
“When you digitalise food, you take away the touch, feel and smell.”
“Food security is a big thing.”
Reflection:
Growing plants in shelves I have never seen before. There they have the optimal conditions to grow and have no bad influence. It was fascinating and scaring at the same time. It somehow looked like a laboratory not like a space where you really get in touch with your food like former farmers did. This abstract way might be a solution but it also causes problems

In my intervention I wanted to show how much food gets lost through the production line which is growing and growing. The noodle is a good example to show this process. It starts with a little grain ending up for example as a noodle in a bowl of hot water. I put different production stops at the floor. The people had to hold a spoon full of grains and going from one to an other. They could always choose two options before the go on. One had positive consequences, the other one was negative. If it was negative, for example the storage got flooded, the had to do a task like spinning around, trying to keep as much grain they could. By testing the intervention I realised at the end that the tasks were to easy and they hardly lost grain. As a result the communication wasn’t clear enough. A better option would be harder tasks or maybe a bag full of sand running out while they had to do the task. So they could see better what gets lost during the process.

Quotes
1. “When I was smelling the fish in the market, I wanted to vomit.”
2. “I was afraid of falling on the ground because it was so slippery and dirty on the floor.”
3. “We saw a big fat rat.”
4. “How can you work in such a place?”

I observe a man behind the fish counter. He is preparing a fish on a large wooden peg. You can tell from his body and his face that the work is hard. His gaze is tired. His hands are whitened and softened by the water. Around his left index finger he wears a red protection. Just now he removes the scales of a fish. His hands are nimble. The scales fly up and spread out. He cuts the head and opens the body. Now fish remains are lying on the wooden peg and you can see blood running. He takes a plastic cup full of water and cleans the surface. His hands glide gently over it.
Questions:
Why do we as non chinese people find this kind of food representation disgusting?
Is it therefore bette to go to a market than a supermarket?
